    3 cloves garlic, minced
    1 cup sweet yellow onion, chopped
    1 cup carrot, sliced
    1 cup celery, sliced
    ½ yellow pepper, chopped
    1 cup zucchini or yellow squash, chunked
    1 cup sweet corn
    2 cups canned diced tomatoes
    2 cups shredded cabbage
    3 cups fresh spinach, torn or chopped if desired
    4 cups cooked black beans
    46 ounces low sodium V8
    1 tablespoon chili powder
    1 teaspoon ground cumin
    2 chipotle en adobo, seeded if desired and diced
    Freshly ground salt to taste


Toss everything in crock pot and cook for a couple of hours, adjusting seasonings as necessary.

Really couldn't be more simple!

Serve with chopped fresh cilantro, or for something a little hardier add some left-over roasted/rotisserie chicken breast.

Great take-along lunch paired with a salad.
