    2 Cups whole wheat flour
    2.5 Cups all purpose flour
    1 tsp salt
    3 tsp baking soda
    4 Cups mashed bananas (9 bananas)
    1.25 Cups brown sugar
    1.25 Cups splenda
    3 tsp cinnamon
    3 tsp vanilla extract
    4 egglands best eggs, large
    0.5 Cups melted smart balance light
    0.5 Cups apple sauce, no sugar added
    2 Cups blueberries, fresh


Preheat oven to 325 F.
-Mix flours, salt and baking soda in a small bowl.
-Mash the bananas and set aside.
-Melt the smart balance in the microwave and set aside.
-In a separate large bowl add all eggs and sugar and beat well. Add vanilla, melted smart balance, apple sauce and beat again. Add mashed bananas and beat well.
-Fold blueberries into mixture. Fold flour mixture a little at a time until it is mixed well.
-Spray 3 bread pans with cooking spray and evenly divide the dough between all 3 pans.
-Bake for 55 minutes at 325 F.
-Alternatively will make 9 mini loaves but will need to adjust the calorie info. If using mini-loaves, bake at 325 F for 35 minutes.

Makes 24 servings, 8 servings each loaf.
