Number of Servings: 10

Ingredients

    6 medium tomatoes, peeled and quartered
    1 medium onion, sliced
    1 medium green pepper, cut into strips
    1/4 cup water8 tsp sugar
    1 1/2 tsp celery salt
    1 1/2 tsp mustard seeds
    1 large cucumber, peeled and sliced
    3.4 cup cider vinegar
    1/4 tsp salt
    1/2 tsp cayenne pepper
    1/8 tsp black pepper

Directions

1. In a large bowl, combine tomatoes, onion, green pepper and cucumber.

2. In a small saucepan, combine vinegar, water, sugar, celery salt, mustard seeds, salt, cayenne pepper and black pepper. Bring to a boil over medium-high heat; boil 1 minute. Pour hot vinegar mixture over the vegetables.

3. Cover and refrigerate 8 hours or overnight, to let the flavors blend. Serve with a slotted spoon.
