    Turkey Bacon, 9 slices, cooked and chopped
    Olive Oil, 2 tsp
    Garlic, 3 cloves, minced
    Onions, raw, 1 cup, chopped
    Green Peppers, 0.5 cup, chopped
    Carrots, raw, 1 medium, chopped
    Red Ripe Tomatoes, 3 medium, chopped
    Black Beans, 45 oz, canned (about 3 cans)
    Chicken Broth (low sodium), 2.75 cup
    Cumin seed, 1 tsp
    Pepper, red or cayenne, 1/2 tsp
    Thyme, ground, 1 tsp
    Salt, Kosher, 1 tsp
    Pepper, 1/2 tsp
    Bay Leaves, 2 ea


Cook the turkey bacon over medium heat until done, then place on paper towels to soak up the grease and let cool. Poor off the grease and wipe the pan.
Put the pan back on medium heat, add olive oil and saute onions and green peppers for 5 minutes. Add garlic and saute for 30 seconds or until fragrant.
Chop remaining veggies and bacon, Puree 2 cans of beans and combine all ingredients in a slow cooker and stir. Cook on low for 6-8 hours or high for 3-4 hours.

Makes eight 1-cup servings.
