Number of Servings: 6


    4-5 cups Water
    1 cube/2 tsp Chicken or Vegetable Bouillon
    1 Large Onion
    1 Large Butternut Squash
    2-4 tbsp Olive Oil

    1 tsp Cayenne Pepper (optional)
    1/2 cup Spring Onions (for garnish)
    6 tbsp of Low fat Sour Cream (for garnish)


Peel and cube butternut squash, taking out interior. Microwave on high for 5-6 minutes until squash is soft.

Meanwhile, sautee onions in frying pan with olive oil, until they are tender. Add water and bouillon. Add softened squash. Let cook over medium/high heat for about 10-15 minutes.

Using hand blender, blend until soup is thick. You can add more water to gain the consistency you would like.

Serve immediately, garnish with spring onions and a dollop of low fat sour cream.

Soup can be frozen.
