Ingredients

    1 1/2 pounds pork tenderloin
    1/2 cup low-sodium beef broth
    6 medium red potatoes, 2" pieces
    12 medium carrots, 2" pieces
    1 medium onion, wedges
    1 Tbsp olive oil
    2 tsp rosemary
    1 tsp sage
    1/4 tsp black pepper

Directions

Arrange pork and vegetables in greased 9X13 dish. Drizzle with oil. Sprinkle with seasonings and beef broth. Bake covered at 450 degrees 30-40 minutes or until pork is 160 degrees.

Or bake covered at 325 degrees for 2 hours.
