Ingredients

    2 c dry bran cereal
    1 1/4 c skim milk
    1/2 c brown sugar, packed
    1/3 c applesauce, unsweetened
    1 egg, lightly beaten
    1 t vanilla
    1/2 c flour
    1/2 c whole wheat flour
    1/4 c oatmeal, ground
    1 T baking powder
    1/4 t salt
    1 c fresh or frozen blackberries

Directions

1. Preheat oven to 350F.
2. Mix cereal and milk in medium bowl; let stand 5 minutes to soften. Beat in sugar, applesauce, egg and vanilla. Combine flour, baking powder and salt in large bowl. Stir in creal mixture just until combined. Gently fold in berries. Spoon batter into 12 foil lined muffin cups.
3. Bake 20 minutes. Remove from pan to wire rack.

Makes 12 one muffin servings.
