    4 catfish fillets
    4 plumb tomatoes, cut in quarters
    20 kalamata olives
    1 pkg frozen articoke hearts
    1 lemon, sliced thin
    salt and pepper
    red pepper flakes
    4 pats of butter
    12 basil leaves
    Italian seasonings


Preheat oven to 350. Cut 4 pieced of parchment paper and fold each of them in half.

On each piece of parchment paper put one piece of catfish, 2 lemon slices and 4 tomato quarters. Divide the artichoke hearts in 4ths and place on top of the tomatoes. Add a pat of butter, salt and pepper andred pepper flakes. Top with 3 basil leaves and a dash of Italian seasonings.

Fold and seal each packet and place on a baking sheet. Brush the top of each packet with olive oil to prevent the paper from burning. Put in oven and bake for 20 minutes or until fish is done.
