Ingredients

    28 ounces whole tomatoes (drained if using canned)
    1 cup nonfat ricotta cheese
    1/4 cup chopped red onion
    1 Tablespoon chopped fresh parsley
    1 Tablespoon chopped fresh thyme (or 1 teaspoon dried)
    1/2 teaspoon salt
    1/4 teaspoon crushed red pepper flakes
    4 cups hot cooked whole wheat ziti or penne pasta
    2 cups great northern beans (rinsed and drained if using canned)
    6 ounces shredded part-skim mozzarella cheese
    1/3 cup grated Parmesan cheese

Directions

Heat oven to 400. Spray 9"x13" baking dish with nonstick cooking spray. Break up tomatoes in a large bowl. Stir in ricotta cheese, onion, parsley, thyme, salt and red pepper. Carefully fold in pasta and beans.
Pour pasta mixture into baking dish, spreading evenly. Cover top with mozzarella cheese. Bake uncovered about 30 minutes or until mixture is hot and cheese is golden brown. Sprinkle with Parmesan cheese.
