Number of Servings: 2


    minced garlic 3-4 med/large cloves
    .5 lb. mushrooms (cut into 1/4 or 1/8 cubes )
    2 tbls olive oil
    mini bottle white wine
    whole wheat linguine
    1/4 lb grape tomatoes
    1/3 lb prawns
    parmesan cheese to garnish


Over medium heat, saute minced garlic and mushrooms (cut into quarters) in olive oil. After garlic and mushrooms start to soften up, add 1/2 mini bottle of white wine to simmer and allow to reduce.

Go ahead and put your linguine on to boil at this time (follow instructions on package).

Add last 1/2 of wine and turn up to medium high heat. Add grape tomatoes and prawns and season to taste. Saute and constantly move prawns, flipping as you go. Within about 3 minutes it will be ready to serve over your cooked linguine. Garnish with grated parmesan cheese & enjoy. (Serves 2)
