Ingredients

    3 Large Onions, thickly sliced
    6 Serrano Peppers, sliced (or to taste)
    4 tbsp crushed red pepper (or to taste)
    2 tbsp fresh Basil, chopped
    2 tbsp Garlic, minced
    Oregano
    2 tbsp Balsamic Vinegar
    1 large can Tomatoes
    2 cups Celery, diced
    2 cups Red Cabbage, sliced
    20 Baby Carrots, halved
    1 lb lean Ground Beef, browned and drained
    14-16 cups Water (1 gallon)
    1/2 cup Barley, uncooked


Directions

Saute the onions, garlic, peppers, oregano and basil in the vinegar for 10 minutes, adding just enough water to keep it from sticking.

Add the remaining ingredients with 8 cups of the water. Bring to a boil, reduce heat and simmer for 50 minutes.

As the liquid boils off, add an additional 6-8 cups of water during cooking for desired thickness.
