Ingredients

2.5 c. Organic Whole Wheat Rotini - dry
1 can Kidney Beans - Dark Red
3 oz Sugar snap peas
12 Grape Tomatoes
1 c. Celery, Diced
1 Carrot, Sliced
.5 Medium onion, thinly sliced
1 c. Miracle Whip Free
1/4 c. White Cheddar, shredded
2 T. Capers, drained
2 t. Dill weed
2 T. White vinegar
1 t. Freshly ground pepper, or to taste
.5 t. Olive oil
Directions
Boil rotini according to instructions on package. While it's boiling, slice carrots, celery, onion, & peas. Rinse pasta & drain. Transfer to large bowl and toss with olive oil to prevent sticking. Grind pepper over pasta. Set aside.
Drain and rinse beans. Shred cheese. Add miracle whip to pasta, then add all other ingredients. Chill for 2 hours before serving.
Yields 14 1-cup servings.
