    3 Asparagus spears thinly siced
    8 oz. crab meat (canned or seafood dept.)
    1/3 C. finely chopped celery
    1/4 C. finely chopped red bel pepper
    1 scallion finely chopped
    4 tsp. lemon juice
    1 Tablespoon low-fat mayo
    1/4 tsp. Old Bay
    2-5 dashes hot sauce
    pepper to taste
    4 whole-wheat, light English Muffins
    1/2 C. shredded Swiss Cheese


1. Place rack in the upper third part of oven, preheat broiler
2. Place asparagus in a medium microwave safe bowl with 1 tsp. water. Cover and microwave until tender about 30 seconds. Add crab, celery, bell pepper, scallion, lemon juice, mayo, Old Bay, hot sauce (to taste), and pepper (to taste); stir to combine.
3. Place english muffin halves, cut side up, on a large baking sheet. Spread a generous 1/4 cup of crab salad on each muffin and sprinkle with 1 tablespoon cheese. Broil until the cheese is melted, 3-6 minutes.
