Ingredients

    1/2 cup Splenda for baking
    1/2 cup Splenda brown sugar for baking
    1 tsp salt
    1 tsp baking soda
    3 large egg whites
    3/4 cup white flour
    3/4 cup whole wheat flour
    1 cup shortening
    3 cups quick oats

Directions

mix all ingredients (except flour and oats until creamy) add flour gradually until creamy. Then add oats. Batter should be very stiff, enough to roll into logs. Separate the dough into 3 logs, roll each log about 8 inches long and wrap in wax paper. Refrigerate for about 1 hour. Slice off cookies, about 1/2 inch each. Bake at 350 for 6-8 minutes. Splenda seems to make cookies burn quicker?!?! Makes 48 cookies.

    All that shortening really scares me. Couldn't something else be substituted like Becel margarine, or applesauce or something not so high fat. - 2/2/08
