    12 oz pkg of broccoli slaw veggies
    1 large onion, sliced thin
    1/2 cup cider vinegar
    1/4 cup sugar
    1/3 cup water
    1 teaspoon yellow mustard
    1 teaspoon celery seed
    1/4 teaspoon lite salt mixture
    2 tablespoons canola, vegetable or olive oil


1. Cut eh thin slices on onion in half or thirds and place them in a large bowl with the broccoli mix.

2. In a 4-cup glass bowl or measuring cup, combine the rest of the ingredients, except the oil.
Place the bowl in a microwave oven and cook for 3-4 minutes on 40% power. The mixture should be boiling. Remove from oven and add the oil. Rerturn to microwave and continue heating for another 45-60 seconds until mixture is boiling again. Watch the mixture during this final stage as the oil tends to make the mixture boil over.
Note: You can also do this on the stove top. Simmer the 6 ingredients for 10 minutes and then add the oil and return to a boil.

3. Pour the hot liquid over the broccoli and onions. Stir very well to combine. Allow to sit on the counter to cool for 15-30 minutes and then transfer to the refrigerator for a couple of hours (or more) before serving.

Makes 8 servings of about 1/2 cup each.
