Introduction
This is a delicious and easy to make vegetarian appetizer that will impress your guests. It can be made a day in advance, and assembled as needed before serving. Ingredients

For potato disks:
6 small red potatoes, washed but not peeled
2 tbsp Olive oil
salt and pepper to taste
For Caviar:
2-1/4 ounce can of black olives, drained and finely chopped
2 tsp Balsamic Vinegar
1 tbsp minced fresh basil
1/4 tsp minced garlic, or 1 clove minced
1/8 tsp red pepper flake or to taste (optional)
1/8 tsp fresh ground black pepper or to taste
For Layers:
2 tbsp fresh chives, chopped finely
2/3 cup sour cream, creme fraiche, or fresh soft goat cheese
Directions
Preheat oven to 375 degrees. Cut the ends off the potatoes, and slice into 1/4in slices. You should get approximately 30 slices. Toss potatoes with 2 tbsp olive oil and place on a baking sheet. Sprinkle with kosher salt and pepper. Bake for 20-25 minutes, or until potatoes are lightly browned. Allow to cool.
Combine all the caviar ingredients. Taste and adjust seasoning as needed.
When potatoes are cool, spread about a teaspoon of your cream choice on each potato slice. Top with about a teaspoon of the olive caviar and then sprinkle with chives. Makes approximately 30 pieces.
(Fresh cucumber slices may be substituted for the potato if desired.)
