    1 small beef roast cut into strips
    (cheaper than ready cut beef)
    1/2 white onion thinly sliced and separated

    1 can condensed onion soup (without water)
    1 green pepper - thinly sliced
    1 red pepper - thinly sliced
    2 cups fresh sliced mushrooms
    1 tbsp light soy sauce
    1/2 cup water


Cut roast into thin 1/2 inch wide strips. You can use meat that has been pre-cut (beef stir-fry or stewing beef) but I buy roasts and cut them myself because it is substantially cheaper.

Cut white onion into rings and separate rings.

Brown beef and onions in covered wok or large frying pan on medium. This allows the beef to cook in it's own juices and adds to the flavour.

When browned pour into roaster. Add remaining ingredients and mix well.

Cover and bake at 350 degrees for 1 1/2 hours to 2 hours until very tender.

Serve over rice.
