Introduction

A simple appetizer... or lunch A simple appetizer... or lunch
Number of Servings: 1

Ingredients

    -Large low carb tortilla

    -Healthy lunch meat (I use ham and/or turkey)

    -1/4 c. fat free shredded cheese (I use cheddar)

    -2oz. fat free cream cheese

    -1/2 cup shredded lettuce

    -3 slices of a medium tomato

Directions

1.Spread the tortilla with cream cheese
2.Sprinkle the tortilla with shredded cheese
3.Place 4 slices of lunch meat evenly down the center of the tortilla
4.Cut the 3 tomatoes in 1/2 and put them evenly down the center of the lunch meat
5.Top with lettuce
6.Roll up tight!
7.Cut into 1/2 inch slices and serve!

I eat one of these by myself for lunch. (I like them when they are cut up) They also make great appetizers at picnics and cookouts! When I have time I like to wrap them up in cling wrap and put them in the fridge for about a 1/2 hour... it really helps them stay together when you cut them!
