    Oscar Mayer Center Cut Bacon (4 lices)
    Egg, fresh, 5 large
    Onions, raw, .75 cup, chopped
    Spinach, fresh, 1 cup torn into pieces
    *Horizon Reduced Fat Cheddar Cheese, 4 oz


1. Preheat oven to 350 and greese muffin pan
2. Cook bacon in skillet or microwave (I microwave mine on a plate covered with a napkin untill crispy) place in fridge to cool off so you can crumble
3. Mix eggs, chopped onion, torn up spinach and crumble bacon in a bowl with a fork.
4. Pour/spoon into muffin pan, might need spoon to spread the onion/spinach/bacon more evenly.
5. sprinkle with cheese and back for about 20 minutes or until eggs are set.
6. Let cool for a few minutes


*These would make a quick pre made breakfast to re-heat in the morning.
