Ingredients

1 package (1 pound) dried pinto beans
1 package (1-1/4 pounds) ground turkey
1 medium red onion, chopped
1 medium bell pepper, chopped
3 cloves of garlic
2 pounds of tomatoes, diced
1 cup low-sodium vegetable juice (e.g. V8)
1 cup of your favorite pasta sauce
1-1/2 cups vegetable broth or stock
1/2 tsp oregano
1/2 tsp black pepper
Chili powder to taste
Brown rice to serve with the meal
Directions
Prepare the dried beans per package instructions.
Brown the ground turkey in a large skillet. Add the onion, bell pepper, and garlic. Put this mixture into a large crockpot and add the remaining ingredients except the rice. Cook on Low for eight or nine hours, stirring occasionally if you can (if you can't it's OK). The longer it simmers the better it will taste.
To serve, cook the brown rice per package instructions. One serving is 1/2 cup of cooked brown rice and one cup of the chili. Makes ten servings.
