Introduction

My variation of cottage meat loaf, without the topping. My variation of cottage meat loaf, without the topping.
Number of Servings: 6

Ingredients

    1 lb lean ground beef
    1/2 cup ketchup
    1/2 tsp. each salt & black pepper
    2 eggs, beaten
    2 slices multi-grain bread, grated into crumbs
    100 g Onion, finely shopped
    2 tsp, prepared mustard (I used Dijon)

Directions

In large bowl, combine ketchup, salt, pepper, eggs, bread crumbs, onion, and mustard. Mix until thoroughly blended.
Add ground beef. Mix gently but thoroughly.
Line a 9 x 5 inch loaf pan with foil. Press in beef mixture.
Bake at 400 deg F for 35 to 45 minutes or until done.
Drain off fat, Rest meat loaf 5 minutes before serving. Garnish with fresh herbs, if desired.
Good served with Spinach salad, mashed potatoes, and buttered broccoli.
