    4 large potatoes, unpeeled, cut into chunks
    1 onion, chopped
    1 Tbsp canola oil
    2 garlic cloves, minced
    1/4 tsp each: pepper, paprika, & thyme
    1 - 10 oz can condensed cheddar cheese soup
    1 tsp dill or parsley
    1 cup grated cheddar cheese
    1 green onion, chopped


1. Pre heat oven to 425 F.
2. Place potato chunks in a 9X13 casserole dish that has been sprayed with Pam.
3. Add onions, oil, garlic, salt, pepper, paprika, & thyme and mix well.
4. Roast potatoes for 30 minutes, stirring once, halfway through cooking time.
5. Remove from oven and reduce temperature to 375 F.
6. Add soup and dill or parsley. Mix well.
7. Sprinkle cheddar cheese on top, followed by green onion.
8. Return potatoes to oven abd bake, uncovered for 25 more minutes until cheese is bubly and potatoes are golden brown around edges. Let stand 5 minutes before serving.
