    1/2 Cup of Arborio Rice
    1/4 cup of chopped onion
    2 tbsp of olive oil
    1 tbsp of olivio light butter spread
    2 cups of swanson 99% fat free chicken broth
    1/4 Parmesan Cheese
    1/8 cup of skim milk
    1 chicken breast cubed
    1 cup of cooked spinach


melt butter and 1 tbsp of olive oil in a pan. saute onions. add garlic if you want at this point. cook for 3 minutes. add rice. cook for 2 minutes. Add 1/2 cup of chicken broth and cook until liquid is absorbed. add remaining broth 1/2 cup at a time waiting for the liquid to be absorbed before adding another. Stir in parmesan cheese and milk.

in another pan saute chicken in 1 tbsp of olive oil, herbs of your choice, and white wine. (do this in between adding chicken broth)

add chicken and 1 cup of cooked spinach to risotto. stir in and serve imediately
