    1 tsp. Salt
    2 tbsp. Ground Cumin
    2 tbsp. Ground Coriander
    6 cloves garlic, minced
    1/4 c. EVOO, divided
    4 boneless pork loin chops (12 oz.)
    Ground black pepper to taste


1. Mix the salt, cumin, coriander, garlic, and 2 tbsp. EVOO to form a paste. Season the pork chops with salt and pepper, and rub with the paste.

2. Heat the remaining EVOO in a skiller over medium heat. Cook pork chops about 5 minutes on each side, to an internal temperature of 160 degrees.
