Kind of like banana bread, but in cookie form. Kind of like banana bread, but in cookie form.
Number of Servings: 27


    1 ripe banana
    2 egg white
    1 tsp vanilla extract
    1 cup unpcked brown sugar
    1 cup whole wheat flour
    1 tsp baking powder
    .5 tsp baking soda
    1 tsp cinnamon
    1.5 cup Quaker Oatmeal
    1 cup blackberries, frozen (unsweetened)


Preheat oven to 375˚
Mash banana and mix with egg white and vanilla. Blend in brown sugar, then flour, baking powder, soda, and cinnamon. When well blended fold in oats and blackberries. Spoon tablespoons of dough onto lightly greased cookie sheet about 2 inches apart. Bake 10-12 minutes in 375˚ oven.
Makes 27 cookies

  • I recommend these; they were delicious. Made them with frozen raspberries as only had fresh blackberries. 'Yummy, scrummy and morish,' said my husband.
    Only problem was I put them on foil ( thinking that they wouodn't stick) and they stuck like mad. I will try cutting down the sugar next time. - 8/10/10
