    3 Aubergine
    1 onion
    2 tins chopped toms
    1 tbsp garlic
    1 cup parmesan grated


slice aubergine into 1 cm slices
cook onion and garlic
add the tomatoes and simmer
once reduced add white wine vinegar
layer a dish with tomato sauce then parmesan then aubergine top with more parmesan or mozzarella and bake 25 minues
serves 6.
