I first found this recipe back in the '70's when I started my tree-hugger days. It always has reminded me - in taste ans smell - of "real" meatloaf . Ingredients

2 c. Cooked Brown Rice
1 1/2 c. Shredded Cheddar
1 c. Finely chopped carrots
1/2 c. Plain non-fat yogurt
4 large eggs, beaten
1/4 c. chopped onion
2 T. Dried Parsley
1/2 tsp. Dried Basil
Dash of salt
Directions
Makes 6 generous servings.
Preheat oven to 350.
Combine all ingredients and spoon into a greased loaf pan. Put the loaf pan into a roasting pan and add about 1 inch of water to the roasting pan.
Cook at 350 for an hour or until an inserted knife comes out clean. (I take it out of the water bath for the last 10 minutes or so just so that it'll brown-up the sides.)
Cool at least 10 minutes before taking out of the loaf pan and serving.
