    1 zucchini
    1 medium onion
    5 garlic cloves
    1 package of fresh spinach
    1 pkg sliced mushrooms
    4 boneless skinless chicken breasts
    1/2 lb pasta, any shape
    2 tbs olive oil
    1 container fat free greek yogurt
    8 oz extra sharp reduced fat cheddar cheese
    salt and pepper to taste


Slice/chop all the vegetables except for the spinach and garlic, and sautee in large frying pan in the olive oil until tender.
Smash the garlic, and marinate with the chicken and the italian dressing. I always use a meat mallet on the chicken.
Add the spinach to the vegetable mix and cook 5 minutes more until spinach is wilted.
In a seperate pot, boil enough water to cook the pasta, and cook as directed.
Remove the vegetables from the frying pan and place on a plate, or bowl while you cook the chicken in the same pan.

Combine the cooked chicken, cooked vegetables and cooked pasta in a large pot.
Add the yogurt and cheddar cheese, and mix well.
Salt and pepper to taste.
