Ingredients

    1 can blackeye peas, rinsed and drained
    1 can no sugar added corn, rinsed and drained
    1 bell pepper, any colors, diced
    1/2 yellow onion, diced
    1 tomato, diced
    2 green onion, sliced
    1 clove garlic, minced
    1 cup zesty Italian dressing
    1 tblspoon dried cilantro (optional)

Directions

Mix all ingredients together and refrigerate until chilled. I like to eat with Scoops, Wasa, whatever's crunchy. It's also good thrown on a salad for a light meal.

Also, the nutritional info is for regular corn. I forgot to add the info for the no sugar added. I rinse the corn and peas 3 or 4 times, so this does help get rid of some of the salt. You can use low fat dressing of course. I usually eat this for supper on a light eating day so I splurge for the bigger calories.
