    4 cups cubed pumpkin
    1 raw medium onion, chopped
    6 tsp garlic, chopped
    2 tbsp olive oil
    1 cube vegetable boullion
    1 cup light soymilk
    pepper, salt and herbs to taste


1. Drizzle pumpkin with olive oil and bake in oven until soft. Mash it with a fork, or puree it.
2. Heat olive oil in a pot, add onions and garlic and cook till soft. Do not brown.
3. Add pumpkin, vegetable boullion, herbs, salt, pepper and water to taste. Bring to gentle simmer.
4. Add soymilk. Bring to boil, or until thick.
5. Serve with toasted croutons.
6. You can freeze portions too.
