Introduction

Lotsa detoxifying veggies make this less-than-100 calories per bowl stew a tasty crowd pleaser that is sure to curb even the most ravenous appetite!. Lotsa detoxifying veggies make this less-than-100 calories per bowl stew a tasty crowd pleaser that is sure to curb even the most ravenous appetite!.

Ingredients

    1 1/2 cups chopped green curly endive
    1/2 cup chopped fresh sweet potato
    1/4 cup chopped carrot matchsticks
    3 tablespoons grated onion
    2 cloves minced garlic
    2 tablespoons fresh chopped parsley
    1 box Pomi tomatoes (If you can find them, no additives or salt, just good old tomatoes in a box!) If you can't find those just use a large can of diced tomatoes with juice, approx. 6 1/2 cup servings.
    1 Tablespoon olive oil
    dash of cardomin, ground rosemary, and garlic pepper
    Tablespoon of dried oregano leaves
    Splash of white wine
    1 Tablespoon Oseh chicken flavored consumme or vegetable broth dissolved in 1/2 cup water
    1 medium size summer squash chopped with seeds removed
    2/3 can dark red kidney beans
    4 cups water

Directions

Start to boil in a medium to large sauce pan 2 cups water with oilve oil, endive, and sweet potato.
Add onion, garlic, carrots and celery.
(The theory here is start cooking first the toughest veggies and add the most fragile last so they don't overcook or get stirred into oblivion)
Add remainder of veggies, water and spices.
Reduce to simmer.
Serve hot or cold.
