Spicy Indonesian inspired stir fry ~ similar to a Gado Gado. Spicy Indonesian inspired stir fry ~ similar to a Gado Gado.
Number of Servings: 4


    4 cups shredded cabbage
    1 medium onion chopped
    1 large carrot sliced diagonally
    1/2 cup red pepper sliced
    1 cup chopped broccoli
    1 pkg Mandarin Deep Fried Tofu (cut cubes in 2)

    Stir Fry veggies in 1 tbsp of olive oil (I also added 1 drop of sesame oil)
    Add tofu at end to heat through

    In a separate sauce pan melt:
    2 Tbsp of Kraft Lite Peanut Butter
    1 Tbsp Olive Oil
    1 tsp Sambal Oelek
    3 Tbsp Lite Coconut Milk
    1/4 cup water
    to make a sauce for stir fry.

    Pour sauce over stir fried veggies and tofu, mix with chopped cilantro and serve


Makes 4 servings

I eat it as is, but it can easily be served over a 1/2 cup of brown rice and still be a low calorie dinner option!
