Ingredients

Kale, 16 cups, chopped
Butter, unsalted, 1 tbsp
Egg, fresh, 3 large
Sorrento Part-Skim Ricotta Cheese, 8 oz
Parmesan Cheese, grated, 2 oz
Mushrooms, fresh, .5 cup, pieces or slices
Nabisco Ritz Crackers, crushed, 2 serving
Salt, .5 tsp (remove)
Pepper, black, .25 tbsp
Garlic, 1 clove
Directions
Pre heat oven tp 375 degrees F.
Remove any large stems from the kale and wash leaves thoroughly. Once clean roughly chop. After washing and chopping place in a salad spinner to thoroughly dry them.
Butter a 9 by 11-inch baking dish and set aside.
In a large mixing bowl whisk together the eggs, ricotta, Parmesan, salt and pepper. Set aside.
In a large pan melt butter, add garlic, mushrooms and a pinch of salt and cook until mushrooms give up their liquid. Add kale and cook until it is wilted. Approximately 3 to 4 minutes. Remove from heat. Add the greens to the egg and cheese mixture and stir to thoroughly combine. Pour into the prepared baking dish, top with the crushed ritz crackers. Bake for 35 to 40 minutes. Allow to cool for 5 minutes and serve.
Can be used as a vegetarian or a side dish.
Makes 8 1 cup servings.
