Number of Servings: 6


    10 oz reduced fat sausage
    2 eggs
    2 cups egg whites
    2 oz of mexican cheese reduced fat
    1 cup red/yellow/green peppers mixed
    1/2 medium tomato
    1/2 cup mushrooms
    1 small onion
    1 potato red or russet
    1 tblsp of cilatro fresh


In a 2 quart baking dish spray with pam and cover with shredded potato. Microwave potatoes for 2 minutes. Next chop and saute the rest of the vegtables and put on top of potato. Then brown sausage and place a layer on top of veggie mixture. Blend eggs with egg whites and pour over the top. Bake on 375 degrees for 35-40 minutes. Take out of the oven and top with cheese. Cut into 6 pieces and serve. optional serve with salsa or jalipenoes.
