Ingredients

    1.5 cups sliced carrots
    1 small onion, chopped
    2 garlic cloves, minced
    3 Tbsp olive oil
    30 oz cannellini beans, rinsed and drained
    32 oz chicken broth, light, fat free and low sodium
    3/4 tsp salt
    1/4 tsp pepper

Directions

In a large soup pot saute carrots, onions and garlic in olive oil until carrots are tender.

Stir in beans, chicken broth, salt and pepper.

Simmer 20 minutes.

    Very Good
    I used 3 garlic cloves & added 1/2 tsp nutmeg to give it a second wave of unexpected flavor - 5/11/09
