    2 cups grated apple (about 3 small to med)
    3 carrots, grated
    1 yellow squash, grated
    1 cup almonds, chopped or sliced
    1 cup raisins
    1 cup sesame seeds
    1 tbsp baking powder
    2 tbsp cinnamon
    3 eggs
    1 cup oil
    1 cup light soymilk
    1/2 cup molasses
    1/2 cup organic sugar
    1 cup oat flour
    1 cup brown rice flour
    1 cup whole wheat flour


Put grated apple, carrot and squash in a large mixing bowl. Stir the baking powder into the flour. Add the flours to the mixing bowl and stir until everything is coated with flour and separated. Add raisins, almonds, sesame seeds and cinnamon. Stir to mix. Stir liquid ingreds together in another bowl, then add to dry ingreds and stir gently til thoroughly mixed. Spoon batter into greased muffin tins or muffin papers. Bake 350 25 to 30 min.
