Ingredients

1/2 cup finely minced red onion
4 cups boiling water
1 1/5 cup mango, sliced
1 1/2 cups black beans (rinsed)
1/2 c finely diced red bell pepper
3 tbs chopped fresh cilantro
2 tbs fresh lime juice
2 tsp minced garlic
1/8 tsp salt
Freshly ground black pepper and cayenne pepper to taste
4 6oz boneless skinless chicken breasts
Salt to taste
Garlic powder to taste
Poultry seasoning to taste
2 tbs olive oil (to coat pan)
Directions
-Place onion in colander or strainer and douse with boiling water. Refresh with cold water and drain.
-Transfer the onion to a bowl. Add the mango, black beans, bell pepper, cilantro, lime juice, garlic and salt; mix gently. Season to taste with black pepper and cayenne. Chill for up to 1 hour to belnd flavors.
-Pat the chicken dry with paper towels and sprinkle it lightly on both sides with salt, garlic powder, and poultry seasoning.
-Heat a large saute pan over med-high heat for about 3 minutes and add olive oil.
-Cook chicken for 3-4 minutes on each side, or until no longer pink
-Remove from pan and serve immediately with the salsa
