    8 oz uncooked boneless, skinless chicken breast
    1 cup canned black beans, rinsed & drained
    1/2 cup salsa
    1/8 tsp table salt, or to taste
    1/8 tst black pepper, or to taste


1. Preheat grill or broiler.

2. Pound chicken breasts to desired thickness. Cook chicken until almost cooked through, about 8 minutes.

3. Mix beans with salsa and season to taste; divide bean salsa among chicken breasts. Broil a few minuted more until chicken is done and beans are warm.

4. Yields 1 chicken breast and about 2/3 cup of bean salsa per serving.

  • This was really good my kids especially loved the black bean salsa. I had to double the recipe to feed us and I used Ms Dash spicy instead of S&P. I also used home made salsa I had on hand. Served it with brown rice
