Ingredients

    1 cup ground flaxseeds
    2 cups whole wheat flour
    1 T baking powder
    2 T sugar
    Grated zest of 1 orange
    1 peeled orange
    1 peeled banana
    2 t canola oil
    1/2 cup soymilk (or rice milk)
    1 cup dried or fresh cherries

Directions

Preheat oven to 400. Stir together first five ingredients in a large bowl. Process remaining ingredients in a blender until smooth. Stir into flour mixture just until combined. Stir in cherries. Spray a muffin pan with nonstick spray. Fill muffin cups with batter. Bake 15 minutes.

These muffins are not sweet or light like traditional muffins that contain lots of oil. They are dense and taste "wholesome." If you're looking for a sweet, light muffin, (chuck full of calories) this is not the recipe for you!
