    - 8 oz boneless skinless chicken breast; cubed
    - 3/4 c. mushroom chunks
    - 3/4 c. bell pepper chunks (red or green)
    - 1/2 c. chopped celery
    - 1/2 c. chopped onion
    - 1/4 c. sliced water chestnuts
    - 2 T. soy sauce
    - 1.5 tsp rice vinegar
    - 2 tsp. sugar
    - 1/2 tsp. cornstarch
    - 1 T chopped dry-roasted peanuts
    - 1 tsp. minced garlic
    - 1 tsp. red chili sauce (or more to taste)
    - salt, pepper, red pepper flakes to taste


(1) Combine 2 T. cold water with soy sauce, vinegar, sugar, cornstarch and chili sauce. Stir well until all ingredients have dissolved. Set aside.
(2) Spray a large pan or wok with nonstick spray and bring to medium high heat. Add chicken, mushrooms, bell peppers, celery, onion, garlic and 2 tsp. of water. Cook about 5 min, stirring occasionally.
(3) Once chicken is almost fully cooked, add peanuts and water chestnuts. Raise heat to high, give sauce a stir and add it to the pan/wok. Mix entire dish until all ingredients are coated and sauce is thick. Add salt and pepper and red pepper flakes to taste.

Makes 2 VERY generous servings - I usually eat with rice and then it makes about 3-4 servings.
