Introduction

This is super easy and delicious. It has about half the calories and fat of traditional vinaigrette. Each serving is 2 tablespoons. This is super easy and delicious. It has about half the calories and fat of traditional vinaigrette. Each serving is 2 tablespoons.

Ingredients

    1/2 cup balsamic vinegar
    3 tbsp olive oil and/or flax oil
    1 small clove garlice, peeled
    1 small shallot, peeled
    3 tbsp fresh mixed herbs (I like oregano, thyme, chives, rosemary, etc, but I use whatever I have on hand)

Directions

Place everything in to the blender and blend on high until smooth and emulsified. Serve.

Tips:
* You want a good quality balsamic vinegar for this, something nicely balanced and smooth. I like Costco's.

* I use a high powered blender (Blendtec) to make this, so if you have a standard blender you may need to roughly chop the herbs and chop or grate the garlic and shallot before blending.
