    Spelt, Grain, 3 cups
    Salt, 1 tsp
    Water 1 - 1½ cup


Mix together - Add more flour or water to make dough stiff - Let rest 10 to 15 minutes - Cut into twelve portions and roll each into a pancake shape - Fry on a dry griddle about 2 minutes on each side - Sometimes you will need to turn a third time and tap the pita to allow it to puff in the center.
