Introduction

This is an easy way to "doctor up" a box meal and make it taste just like homemade. I always add just a little hot sauce to my bowl. It is a one dish meal but I sometimes serve it with a salad. Ingredients

    1 Box Zatarain's New Orleans Style Jambalaya Mix
    1 Package Healthy Choice (or Healthy Ones) Skinless Smoked Sausage, cut into bite sized pieces
    1 T vegetable oil
    1 red bell pepper, chopped (green pepper works too)
    1 cup onion, chopped
    1 stalk celery, chopped
    2 1/2 cup water

Directions

Heat vegetable oil in skillet and saute vegetables over medium-high heat until crisp tender, about 7 minutes. Add 2 1/2 water and bring to a boil. Add Jambalaya Mix and meat, return mixture to a boil.

Reduce heat, stir, cover and simmer over low heat for 25 minutes.

Remove from heat, let stand for 5 minutes. Fluff and Serve.

Makes 4 large servings or 6 moderate servings.
