Ingredients

2cups Thick Variety Beaten Parched Rice(Poha/Chidwa)
1medium Potato sliced in 0.5" thick pieces
2large Shallots(Red Onions) chopped
1tsp.Turmeric Powder
1tsp.Sugar
Salt to taste
2 Lemons cut into wedges
5-6 hot Green Chillies
2tsps.Black Mustard Seeds
1tsp.Cumin Seeds
5-6 Sweet curry Leaves
2tsps.Asafoetida(Hing)Powder
2tbsps.Sunflower Oil
GARNISHING
0.5cup shredded Raw Coconut
15tbsps.Coriander(Cilantro)Leaves chopped fine
Directions
Wash and drain the Dry Pohey under the Tap in a colander and set aside till dry and fluffy.In these washed Pohey mix in a dash of Salt and the Sugar.
Heat Oil in a wok and lower flame.Add the Black Mustard seeds,Cumin Seeds,Sweet Curry Leaves and Asafoetida(Hing) Powder.When these sputter add the chopped Shallots(Red Onions) and saute till soft.Add the sliced Potatoes,Green Chillies,Turmeric Powder and a dash of Salt.Cover and cook on low flame till Potatoes are cooked.Stir in the washed and seasoned Pohey and mix well.Cover and steam for 6-7 minutes till well heated through.
Garnish with shredded Raw Coconut and finely chopped Coriander Leaves.Serve hot with a wedge of Lemon in each plate.
