Ingredients

    2 cups brown rice
    1lb chicken breast, cut into 1/2" pieces
    1 cup mandarin oranges
    1/3 cup orange juice
    1tbsp olive oil
    1 tbsp reduced sodium soy sauce
    1 tbsp honey
    1 packet splenda
    1 tsp grated ginger
    2 tsp orange zest
    3 cloves garlic, minced
    1/2 tsp cornstarch
    1/4 to 1 1/2 tsp red pepper flakes (to taste)
    salt & pepper to taste (not included in nutritional info)

Directions

Cook rice according to package instructions.

Meanwhile, in a small bowl combine orange juice, soy sauce, honey, splenda, orange zest, ginger, cornstarch and pepper flakes. Set aside.

Heat olive oil over med high heat, add garlic cook 30 seconds. Add chicken, sprinkle with salt & pepper, cook for 4-5 min or until no longer pink in center. Add juice mix & mandarin oranges , cook until thickened stirring constantly, about 1 min.
Serve over rice.
**note**
If your house is like mine and everyone likes a different level of spice, add 1/4 tsp of pepper flakes to juice mix, then sprinkle 1/4-1/2 tsp on those who want a little more kick.

    I love this recipe! I threw an orange in the food processor instead of juice and skipped the rice and oranges and just had this over some plain stir-fried veggies! YUM! I also added garlic to the sauce..Big hit with everyone, kids and adults! - 1/27/09

    I made this dish for dinner tonight, what a huge success! I have tried other orange glazed chicken recipes which my kids protested, but this was great! I didn't hear one word about not eating this! Thank you for such a great recipe! I will definitely be making this again!! - 5/21/09
