Introduction

While this recipe does not let you eat the whole cake (some of you have thought of it!), if you're craving a yummy carrot cake then you're much better off diving into this than the 1000+ calorie and 20g+ of fat in original recipes. Give it a shot - it's GREAT! Plus, the nutrition facts are for an 1/8th of the cake - that's a big piece!! Ingredients

    1 18oz pkg of yellow cake mix (mix only)
    2 tsp cinnamon
    1 can diet sprite
    2 cups shredded carrots (3 carrots)
    1 can (8 oz.) of crushed pineapple (drained)
    2 pkgs (8 oz. each) Fat Free Cream Cheese
    2 cups splenda
    1 tub (8 oz.) Cool Whip Free (thawed)

Directions

Heat the oven to 350°F.
Mix together the cake mix, cinnamon and can of diet sprite; stir in the carrots and pineapple. Pour into 2 (9-inch) square pansand bake 25 to 30 min. (clean toothpick). Let cool in pans, remove from pans and let cool completely!

Beat the cream cheese and splenda until well blended and whisk in the cool whip.

Spread frosting between cake layers and on the top and sides of the cake. ENJOY!

*You can also add nuts to this recipe, I just don't care for them in the cake so theyre not included in the nutritional info.
