Ingredients

    1 small onion, chopped

    2 tbsp. vegetable or olive oil

    2 lbs. carrots, chopped

    ½ lb potatoes, chopped

    ½ tbsp. fresh chopped ginger or ½ tsp. ground ginger

    10 cups chicken stock

    ½ tbsp. soy sauce

    ½ cup fresh orange juice

    ½ tsp. garlic powder

    salt & pepper to taste

Directions

Sauté the onion in oil for 2 minutes.

Add carrot, potato and ginger, cook 2 minutes.

Add chicken stock, season with garlic, salt, pepper

Bring to boil. Lower heat and simmer, covered until vegetables are tender, about 15 to 20 minutes.

Stir in soy sauce and orange juice. Puree until smooth. Makes about 14 cups.

Freezes well.
