    1 c. brown rice
    16 oz bag frozen gumbo vegetables
    1 can black beans
    16 oz jar salsa
    1 pk red mole sauce mix
    4 lbs lean pork loin
    2 c water


Put everything together into slow cooker or dutch oven, and cook on low heat until pork falls apart, about 4 hours.
You can make this spicier by using hot salsa instead of mild.
Yields about 9 one cup servings.
