Introduction

Ingredients

1.5 oz chicken breast ( about 2 thin strips)
3 large shrimp
1/4 cup rice noodles
1/4 C spinach
1 T cilantro, chopped
1 Spring Roll wrapper, round
Directions
Cook chicken on stove top or grill. I use garlic powder sometimes to add a little extra flavor. Soften noodles. (I usually boil water, add noodles, turn off heat and let sit for 1 minute before draining. Then cool. Sometimes I make these ahead of time to save time later. You want the noodles and chicken to be cool before adding to wrapper.) When ready to prepare rolls, add water to large microwave safe bowl and heat up so that you can quickly dunk wrapper in water to soften before adding remaining ingredients. You don't want to leave wrapper in the water for too long or it will be difficult to use. When wrapper is ready, add sliced chicken lengthwise about 1 inch from edge. Layer shrimp, noodles Then add cilantro and spinach. Fold both sides inward and then begin rolling up. The wrapper should stick together on it's own. Enjoy with hoisin sauce not calculated into nutritional value. I prefer the round wrappers that you can find at Asian stores. They seem to be stronger and hold up better when preparing. Serving size is 1 Spring Roll. Recipe is for 1 serving.
