Ingredients

    1 head cauliflower, diced
    1 can tomatoes
    1 tomato, diced
    1/2 cup fresh basil or oregano, chopped
    1 med. yellow onion, diced
    1/2 cup orange juice
    1 tbsp cornstarch

Directions

Stir fry onion in canola oil spray for a couple minutes until warm. Add cauliflower and orange juice and cover, cook for 5 minutes. Add tomatoes, basil, salt to taste, and cook, covered, 3-5 more minutes. Add cornstarch and stir well to thicken the sauce. Serve over brown rice.
